All of Mum's ideas are great! You can also go to the CDC and other government websites and request educational info--we got 300 antismoking posters with famous people on them!

You could also have a dentist come in for dental care, and participate in the Presidential Physical Fitness Program--Escape School or other Self-defense and safety awareness programs are great as well!

Just a few ideas for you to think about off the top of my head--
--sponsor Red Ribbon week activities (anti-drug theme) at the end of October
--encourage parents to come eat lunch with their kids at school so they can see what their kids are eating
--work with cafeteria staff to improve nutritional content of school lunches
--start a block parent program
--hold a health fair (get local hospital, doctors offices, etc. to come in and set up booths)
--hold a safety fair (sort of same as health fair, but do car seat safety checks, seminars on internet safety, etc.)
--hold a bike or inline skating rodeo
--sponsor a kid ID card program
--get a chiropractor to come in and talk about backpack safety

If you check with your local State Farm agent, I believe they have lots of safety information and seminars you can take advantage of. Hope this sparks some other ideas for you!

Have you asked what your duties/responsabilities are as the coordinator? maybe there was someone before you that can help you out. Do you have a nurse at the school? I think that she/he might help you out with the health part of it( if there is not one go to www.webmd.com, they have very good references , for example, you can do a newsletter about the flu season, ozone alerts, asthma and allegies,head lice, food allergies, vision screenings, ect...) , as for safety, is it the school safety overall ( security cameras, security codes for each family and grade, all doors locked, checking I.D.s for pick-ups, designated drop-off and pick-up areas ) or just the children safety?
