Pancake Breakfast Advice

We used the pre-cooked bacon that someone donated. All we had to do was heat it, it was really good.
We made the pancake batter on site, we used Krustez, the kind where you only need to add water. We had 4 dad's making the batter and manning the griddles, it worked out great. I don't think you'd need to make it up the night before.

This was our first pancake breakfast and had over 200 people attend! We had pancake mix left, and barely any bacon.

I haven't done a pancake breakfast, but sometimes I make a double batch of batter just for the heck of it and make pancakes on both weekend days. Make sure you allow time for the batter to lose it's chill just a bit (it gets very thick after refridgeration) and you might need to add a little water or milk.

How many people did you serve? Did you pre-cook the bacon? We are planning to have sausages and would like to precook them.

I also learned from the fire department that they prepare the pancake batter the night before. Did you do this, or do you think that would be helpful?

We did our first pancake breakfast this past November. It went over great. We incorporated a raffle into ours, all the classes (K-5)picked a theme and then donated those items. It went over really well.
Make sure you have enough griddles! Start the food about 1/2 hour before you expect your first guests. We had some inexpensive foil bunson burners, we purchased the cans of fuel at the dollar store to keep our surplus of cakes and bacon hot. We offered OJ, water and coffee. We also set up a table of "condiments" for the pancakes. Strawberries (thawed frozen), chocolate syrup, sprinkles, etc. The kids of course loved that. The strawberries were a big hit.
We charged $5 per family or $2 if you came solo.
