Question: How to account for cash tips to vendors

We decided to cater teacher lunch during the Teacher Appreciation Week. The person who picked up the order from the place felt she should leave tip since the manager opened the kitchen early for us. We are OK with tipping, but how do I (Treasurer) account for that? Tip was paid in cash, and there's no receipt for it. Thank you
