We usually do our vote with a show of hands, if we choose can we do a ballet vote instead? I have checked the bylaws and I don't see anything at all about either way.

If you follow Robert's Rules of Order, then you should be having ballot votes when you have elections. If you have only one candidate for an office, and your bylaws allow it, you may elect by voice vote (ie without a ballot).
